A Double Bay institution, Indigo’s pancakes are a permanent fixture on the ever-changing menu – they’re that good. The caramelised banana is the star on top of the stack, finished with a generous dollop of vanilla-whipped mascarpone.

Cuckoo Callay
Does it get better than a fondant pancake? Those in the Inner West are spoilt with this offering from Cuckoo Callay. Filled with lemon and white chocolate and artistically decorated with vanilla crème fraiche, blackcurrant ice-cream, macadamia crumble and sour cherry sauce, it’s the prettiest pancake in Sydney.

Harry’s
Locals flock to Harry’s at Bondi Beach for some of the best coffee in the beachside suburb – and the impressive pancake. If you haven’t already spotted it on Instagram, expect lashings of maple syrup drizzled over the ricotta hotcake decorated with blueberries, lemon balm, double cream and edible flowers.

Fika Swedish Kitchen
Just a few blocks back from the shores of Manly’s picturesque beach, Fika Swedish Kitchen serves up a less than conventional pancake, although that doesn’t make the Alandspannkaka any less delicious. The square (yes, you read right) semolina pancake, is generously topped with cream and homemade jam. Hard to say – easy to eat.

Blackwood Pantry
A favourite haunt of Shire locals, Blackwood Pantry’s fruity take on the humble hotcake deserves recognition. Served with passion fruit curd, blueberries, pomegranate and fresh coconut, it’s best consumed after a dip at the beach.

Those with a healthy conscience don’t have to miss out on the pancake parade thanks to health-conscious Hale and Hearty. This unassuming café in Waterloo serves up 12 varieties of pancakes – with both sweet and savoury options that are gluten-free and dairy-free. Craving an exotic stack? Try the crispy bacon and avocado or organic turmeric and mango pancakes.
