How do you like your pancakes? Stacked high and topped with fruit? Or filled with cheesy, savoury goodness? Or, perhaps, one that’s square and made of semolina? Some swear by the French-style thin crepe; others want a springy, spongy American version perfect for soaking up all that maple syrup. Whatever your pancake passion, Sydney’s breakfast game is strong – batter up.

Bills

With three venues in Sydney, Bills’ famous ricotta hotcakes with honeycomb butter and banana are never too far away. Whether you venture to Darlinghurst, Surry Hills or Bondi Beach, the dish is (fortunately) available all day.

Cuckoo Callay

Does it get better than a fondant pancake? Those in the Inner West are spoilt with this offering from Cuckoo Callay. Filled with lemon and white chocolate and artistically decorated with vanilla crème fraiche, blackcurrant ice-cream, macadamia crumble and sour cherry sauce, it’s the prettiest pancake in Sydney.

Bread and Circus

You may have to wait for a table on the weekend, but the pancakes at Alexandria’s Bread and Circus are worth it. Banana and ricotta pancakes dished up with maple syrup, lemon compound butter, caramalised banana and strawberries are a favourite on this canteen’s menu.

Fika Swedish Kitchen

Just a few blocks back from the shores of Manly’s picturesque beach, Fika Swedish Kitchen serves up a less than conventional pancake, although that doesn’t make the Alandspannkaka any less delicious. The square (yes, you read right) semolina pancake, is generously topped with cream and homemade jam. Hard to say – easy to eat.
