In the morning, the menu is unabashedly indulgent (why yes, I would love to add fresh Tasmanian rock lobster to my sumac-sprinkled eggs benny), with a delicious cacao-nib strewn granola a highlight. At dinnertime, there’s a local twist to the classics: think Tasmanian truffle arancini and Cape Grim beef, seasoned with Tasman salt.

There are three smart meeting rooms, the largest accommodating up to 150 people. Wi-fi is free throughout the property and all rooms have a little table and comfy chair to double as an in-room workspace.
