Parmelia Hilton – Hotel Review
After a major $45 million transformation, Parmelia Hilton reopened in early 2021 with a gleaming marble lobby, a spacious club lounge on the ground floor and a spate of meeting and function rooms. All guestrooms have undergone a thorough refurb and 32 new options have been added. But the hotel’s most noteworthy innovation is the touchless technology that allows guests to access their rooms and onsite facilities such as the swimming pool and fitness centre using a “digital key” they can download on their smartphone.

Room types
A neutral palette of colours sets the scene in the 309 highly functional and minimalist rooms and suites at Parmelia Hilton. Categories range from King rooms to King Premier Suites, but each of the options feature work desks and spacious ensuites, while many also come with separate sitting areas, and baths and twin sinks in the bathrooms.
Restaurants and bars
Chef Chad Miskiewicz is at the helm of Samuels on Mill – Parmelia Hilton’s onsite bar and restaurant, where you can kick off the day with a breakfast of crab and chive omelette, enjoy a sumptuous meal for lunch or dinner (king prawn risotto with mascarpone, perhaps) or simply drop in for a quick and satisfying meal at the bar (the wagyu burger with caramelised onion is a hit).
Travel for work
There are a number of meeting and function rooms that can be set up for banquets, conferences, intimate gatherings and events that require U-shape or theatre-style seating. Corporate travellers can also spread out in the hotel’s club lounge during the day – although that area tends to get busy with crowds in the evening.
Pool and gym
There’s no spa on site but there is an outdoor swimming pool on the second floor (open from 7am-10pm), plus a spacious gym (open 24/7) with lots of daylight on the same floor.
What you need to know
As part of the recent refurb, a new thoroughfare has been added to the hotel, connecting it to the shopping and dining precinct of Brookfield Place. So there’s really no reason to not explore the CBD.
