The Paddington Arms Hotel has had a makeover ahead of its re-launch as The Paddington — the newest baby of Justin Hemmes’ Merivale Group — on November 24.

Celebrated chef Ben Greeno (ex Momofuku Seiōbo) has created a delicious rotisserie menu, with highlights including whole roast chicken; beef with artichokes, pickled mustard seeds and watercress; and whole fish stuffed with olives, lemon and thyme. Side dishes include smoked trout, English muffin and duck egg; grilled bottle squid with XO sauce; and crab on toast.

In keeping with the rustic menu, The Paddington will be fitted out like a traditional English pub, with dark timber furniture, intimate booth seating and paneled walls. The aim is to create a casual environment without compromising on food or quality.

Bartenders Sam Egerton and Toby Marshall, of Palmer & Co fame, will oversee the cocktail bar. Order the House Mary, with Wyborowa vodka, Averna, Worcestershire, Sriracha, tomato, lemon and chicken.

And keep your eyes peeled; The Paddington is the first of three new Merivale properties set to open on Oxford Street in the coming months.
