As restaurateur David Chang’s first venture outside of New York City, Momofuku Seiōbo garnered worldwide attention when it joined his list of venerable establishments. The daily tasting menu, available with three different beverage pairing options, is worth the splurge and showcases indigenous Australian ingredients in moodily lit surrounds to the sound of one of Chang's invigorating signature playlists (look out for the homage to AC/DC). A prime spot to witness the chefs' culinary theatrics and flawless attention to detail is from the seats around the gleaming open kitchen – although you're never far from the action as the space only seats 36 diners. The bar menu caters for walk-ins at dinnertime and five spots at the bar for Saturday lunch, while reservations for the tasting menu can be made online up to three months in advance.
