Char pride themselves on top-notch steaks so if you’re in the mood for a gutsy T-bone, a rare eye fillet or maybe even a Wagyu rump cap, this is the place for you. Carnivores might have the lion’s share of options here but there’s also plenty to tempt more omnivorous palates: perhaps crispy fried whole fish with soy and spring onion? Or scallops with pork belly and salted chilli caramel? (Though vegetarians should be aware: the menu options are slight) The restaurant is in a gracious elevated home, built in 1937 to house north Australia’s naval commander. It’s a chic establishment and known as one of the places Northern Territory's heavy hitters go to talk business – so, as you might expect, the wine list is also exemplary. Char also does some of Darwin’s best desserts – it’s hard to go past the deconstructed banoffee pie with caramelised banana and dulce de leche toffee.
