This iconic Kyushu-based chain arrived in Brisbane in 2019, quietly announcing an alternative to the fussed-over Japanese noodle soups that dominate round town. Danbo does perhaps the ultimate salaryman-style ramen: a delicious clean-tasting tonkotsu broth served with braised pork, handmade noodles, a fistful of spring onion – and that’s about it. The one accoutrement is a dollop of spicy tare sauce, although softboiled egg and seaweed can be added. The digs are unfussy, with plenty of bar seating comfortable enough for the time it takes to sink a bowl and an Orion beer or two.
