Of all the great chefs with outlets in Vegas, there are three old-school superstars whose names tower above the rest: Guy Savoy, Joël Robuchon and Pierre Gagnaire. The food at each is roughly comparable, all made with the same obsessive intensity that afflicts most Michelin three-star chefs. So why choose Gagnaire’s Twist over the others? Well, its clean minimal dining room hints at a refreshing lack of pretension uncommon at this level of fine dining and the views are better than at either of the others. It’s also considerably cheaper. And when your bill is in the four figures, there’s no shame in not feeling that you have to decide between dessert and your child’s education.
