“The travel experience on my 2020 wish list is not a place but a wine. Recently, at a restaurant in Aspen, the sommelier served me an exquisite glass of white wine called chasselas (pronounced "shasalas"). I was intrigued. I had never heard of that varietal but I was even more surprised when the sommelier said it was from Switzerland? Swiss do wines, I almost choked on my chasselas. ‘Yes,’ replied the sommelier, ‘but no one ever hears of them. Most of what they produce, they drink themselves. The rest is exported but with heavy duties. So the best way to experience them is to actually go there.’ That's it. I'm going to Switzerland. More specifically to the Valais wine region. For chasselas.”
