The food: Bali’s iconic beach club has arrived in Australia with three distinct dining areas and offerings: casual Italian at Deck; seafood and charcuterie at The West; and à la carte at Dining.
The drinks: More than 200 wines from Australian and international producers, plus local beers and classic cocktails.
The atmosphere: The mood evolves, from uproarious at Deck to more sedate at Dining.
The location: The banks of the Swan River in East Perth.

CANBERRA
Agostinis
The food: Italian-born chef Francesco Balestrieri is behind a menu inspired by Rome’s trattorias. Expect deep-fried calzone stuffed with Italian sausage and ham, plus pizza topped with cheeses such as buffalo mozzarella and fior di latte.
The drinks: About 50 wines are on offer: whites and sparklings from the Canberra District and robust reds, mostly from Italy.
The atmosphere: White walls splashed with blue and pink promise a relaxed vibe.
The location: Ground floor of Canberra’s renowned East Hotel.

SYDNEY
The food: Chef Chris Yan looked to the streets of Shanghai when creating the dishes for this new restaurant. Try chicken meatballs with pineapple sambal at yum cha or order spicy salt-and-pepper pork ribs from the bar menu.
The drinks: Choose from more than 200 wines from the Old and New worlds or settle for one of mixologist Kate McGraw’s Asian-inspired cocktails.
The atmosphere: Chinoiserie-style furnishings with some intimate nooks.
The location: Darlinghurst, overlooking Hyde Park.

WARRAGUL, VIC
The food: A collaboration between chef Trevor Perkins and winemakers William Downie and Patrick Sullivan, this destination eatery in Gippsland offers two- and three- course meals with dishes such as eight-hour smoked short ribs.
The drinks: The wine list focuses on Victorian regions, including the Mornington Peninsula, Gippsland and Yarra Valley.
The atmosphere: The sunlit high- ceilinged space has floor-to-ceiling windows that frame vineyard views.
The location: Warragul, about 90 minutes’ drive south-east of Melbourne.
